Fresh Squeezed Lemonade

With the temperature being 103* today, I figured fresh squeezed lemonade would be a welcomed treat. This lemonade is simple, yet delicious. If you want something a little more than plain lemonade, you could add sliced strawberries, raspberries or mint sprigs.
This lemonade isn't simply lemon juice, water and sugar, but rather it is made with simple syrup for a fresh and explosive taste.

2 cups lemon juice (8-10 lemons)
2 cups water
1 1/2 cups sugar (more or less depending on your personal preference)
8 cups cold water

1. Extract the juice from lemons, it helps to toss the lemons in the microwave for 15-20 seconds each before juicing. Strain the juice to avoid seeds and as much pulp as possible.
2. In a medium saucepan, over medium heat, combine 2 cups of water and sugar, cooking until sugar dissolves.
3. Add the simple syrup to your lemon juice and stir well, allow to sit for a few minutes to really bring out the flavors.
4. Add cold water to lemonade, refrigerate 30 minutes, until chilled. Serve over ice and enjoy.

For a fancy touch, add lemon slices to the pitcher or glass before serving.
